Ingredients
1 pound all natural lean ground turkey
½ cup plus 2 tablespoons Korean teriyaki stir-fry sauce
1 package (14.2 ounces) udon stir-fry noodles
1 bag (12 ounces) refrigerated steam in bag California stir-fry
2 bunches baby bok choy, chopped
Directions

1. Preheat oven to 400°; spray 8.5 x 11-inch baking dish with cooking spray. Form turkey into 16 (1-inch) meatballs and place in prepared dish; pour ½ cup sauce over meatballs and turn meatballs to coat. Bake meatballs 20 minutes or until internal temperature reaches 165°, stirring once.

 

2. Prepare noodles in microwave oven as label directs; transfer to large bowl and stir in remaining 2 tablespoons sauce.

 

3. Prepare stir-fry vegetables in microwave oven as label directs. Stir vegetables and bok choy into noodles. Makes about 8 cups.

 

4. Divide noodle mixture into 4 bowls; top with meatballs and sauce.
